APPLE CINNAMON STEEL CUT OATS (SERVES 4)

3 cups of water
1 cup of steel cut oats
1 tsp pure vanilla extract

per bowl…
1/2 tsp cinnamon (or to taste)
1 TBSP milled flaxseed
1 TBSP Knudsen’s Organic Apple Butter, or to taste (Read the label. You’ll be pleasantly surprised!)
1 red delicious apple, cored and chopped

DIRECTIONS:
In a large saucepan, bring water to a boil. Add oats. Reduce heat to a low simmer and cover. Cook approximately 20 minutes or until oats reach desired tenderness. Stir in vanilla extract.

While oats are cooking, core and chop 4 small (or 2 med) red apples. (I prefer Gala, but Red Delicious will suffice.) Cook apples until tender.

Divide apples into 4 serving bowls. Spoon oatmeal over apples. To each bowl add cinnamon, milled flaxseed, and apple butter. Stir and serve hot.

p.s. Crumbled graham crackers on top transforms this from delicious to dessert.
