The combination of sweet maple syrup and tangy dried fruit is just right. This is how we like it, but you might do a bit of tweaking. This recipe makes a small batch – enough to fill one baking sheet.

SIMPLE HOMEMADE GRANOLA
1 cup whole rolled oats
1 cup cook quicking oats
1/2 c chopped almonds
1/4 cup chopped walnuts
3 tbsp pumkin seeds
3 tbsp sunflower seeds
1 c dried fruit (we like a mixture of cranberries, cherries & blueberries)
1-1/4 tsp cinnamon
2 pinches of sea salt
4 TBSP natural maple syrup
1 TBSP olive oil
1/2 tsp vanilla
1 TBSP flax seed meal

Pre-heat oven to 300 degrees.
Line a large baking sheet with parchment paper.
In a large bowl, mix oats, nuts, seeds, cinnamon, salt, and flax seed meal.
In a small bowl mix maple syrup, vanilla, and olive oil.
Slowly stir the wet mixture into the dry mixture.
Spread evenly onto the parchment lined baking sheet.
Bake 20 to 30 minutes or until dried, stirring about every 10 minutes during baking, being careful not to scorch.
Cool and toss with dried fruit.
Store in an airtight container.
